Job Description
We are seeking an accomplished Executive Sous Chef with exceptional expertise in Modern Chinese Cuisine to support the culinary leadership of a luxury dining concept. The ideal candidate will possess extensive knowledge of traditional Chinese cooking techniques while demonstrating the creativity to transform classic recipes into refined, contemporary dishes inspired by globally recognized brands such as Philippe Chow, Mr. Chow, Hakkasan, Hutong, Mott 32, Tattu, and Shanghai Me. The successful candidate will play a key role in menu innovation, kitchen operations, team leadership, and maintaining the highest standards of food quality, presentation, and consistency.
Key Responsibilities
- * Prepare and oversee authentic Modern Chinese cuisine, maintaining premium dining standards.
- * Demonstrate expertise in Beijing-style and Hong Kong-inspired cooking techniques.
- * Execute high-heat wok cooking with precision and consistency.
- * Produce premium dim sum, dumplings, bao, handmade noodles, and other specialty Chinese dishes.
- * Prepare signature roasted specialties, including Beijing Duck and lacquered meats.
- * Develop and refine signature sauces with balanced, authentic flavor profiles.
- * Ensure exceptional plating and presentation that reflects luxury dining standards.
- * Maintain consistency in taste, quality, and portion control across all menu items.
- * Collaborate with the Executive Chef and Culinary Director to create innovative menus.
- * Modernize traditional Chinese recipes while preserving authenticity.
- * Introduce premium signature dishes that strengthen the restaurant's brand identity.
- * Standardize recipes and drive continuous menu improvement initiatives.
- * Supervise, mentor, and motivate a multicultural kitchen brigade.
- * Train junior chefs in advanced Chinese culinary techniques and presentation standards.
- * Foster a culture of teamwork, discipline, and continuous learning.
- * Monitor daily kitchen operations to ensure efficiency and smooth service.
- * Ensure compliance with HACCP, food safety, sanitation, and hygiene standards.
- * Manage food costing, inventory control, and waste reduction initiatives.
- * Coordinate with suppliers to source premium-quality Chinese ingredients.
- * Optimize kitchen workflows to improve efficiency and productivity.
- * Ensure kitchen equipment and facilities are properly maintained and operational.
Requirements
- * Minimum 10 years of progressive culinary experience.
- * At least 5–7 years in senior culinary leadership roles within premium Chinese restaurants.
- * HACCP or Food Safety Certification preferred.
- * Additional certifications in Chinese culinary arts will be an advantage.
